Ingredients
2.5lbssweet potatoes
6tablespoonsbutterplus more for topping if desired
1/2cupsour cream
1/4cupparmesan
1teaspoonsalt
1teaspoonpepper

Instructions
Peel the sweet potatoes, and chop them into 2 inch cubes. Add the potatoes to a large pot and cover with water. Place on the stove and bring to a boil.
Boil the potatoes for 12-14 minutes, until they are fork tender. Then drain the potatoes and return to the pot.
Add butter, sour cream, parmesan, salt and pepper and mash with the potatoes until they reach the desired consistency.OR, for a smooth consistency use an electric mixer on low until everything is just combined and the potatoes are smooth.
Top your potatoes with extra melted butter and chopped chives.
Notes
*Tip* If you'd like to turn this into a sweet potato casserole, put your potatoes into a casserole dish, add a cup of mini marshmallows and bake at 350°F for about 20 minutes. Keep an eye on it during the last few minutes to ensure the marshmallows are golden brown and the casserole is heated through.
