Ingredients
6large eggs
¾cupegg whites
salt and ground black pepperto taste
3/4cupdiced fully cooked ham(about 6 ounces)
3/4cupsmall chopped broccoli floretsfresh or frozen
1red bell pepperfinely diced (about 3/4 cup)
3/4cupshredded sharp cheddar cheese
Instructions
Preheat oven to 400˚F.
Whisk together the eggs and egg whites. Mix in ham, broccoli florets, and red pepper.
Use a small ladle or measuring cup to fill each cup of a greased 12 count muffin tin about 3/4 full. Top each muffin with the cheddar cheese.
Bake for 10-12 minutes, or until the egg cups are cooked completely through and spring back when touched.
Serve warm. Enjoy!
Notes
Tip: Make sure to dice the red pepper, and broccoli florets into very small pieces so that they are able to cook through in the same time frame as the eggs. Larger cuts may stay more crunchy.
